Partner with The Woodland Trust, the largest conservation charity in the UK for a fundraising dinner to raise funds for four World War I centenary woods.
Create an extraordinary outdoor dining experience for 30 invited guests in a farm woodland & former WWI training ground in Surrey.
Celebrate & pay homage to WWI in the event & menu design. Highlight how the woods & trees play an integral role in all aspects of our lives.
We researched all the local native trees & natural materials to inspire our menu design; as well as the 1920s & WWI to incorporate elements of the era into our event design.
Think tree bark smokery; rowan berries; galvanised buckets, sustainable log dining plates, eclectic vintage china, ration tins, mini milk bottles, ’street party’ sharing starter & vintage homemade snacks around the campfire.
We created a quintessentially ‘British favourites’ menu with a modern & ethical twist that celebrated local, seasonal, home-grown produce & the woodland surroundings.
‘Sharing street party’ starter of pulled pork pies, canned ‘bully beef’, beetroot consommé served in mini milk bottles, sorrel leaf & broad bean Scotch eggs & ‘old fashioned’ tin artisan loafs
Duo of beef consisting of mini suet pudding and slow cooked fillet with woodland mushroom purée, baby heritage carrots, baby onion rings, nasturtium leaves & bone marrow
Wild mushroom Wellington, lemon thyme Parmesan cannelloni filled with smoked goats’ cheese mousse, uprooted baby beets & squash velouté to pour
White chocolate sphere filled with apple compôte, vanilla crumble, English raspberries & toffee sauce to pour served from ration tins.
